Honey Cake with Butter Cream

This cake was an attack on the tastebuds. At first we were dubious about the combination of quite different flavours: honey, orange, coffee and chocolate. However, it turned out to be a lovely fusion of bitter-sweet zestyness with an underlying rich honey flavour.  The finished product looks pretty retro too.

Whip together the eggs and sugar for 5 minutes and then add the honey

Finally, mix in the ground cloves, flour and bicarbonate of soda

Pour the mixture in to a greased cake tin (we used a rectangular 12″ x 8″ tin) and bake for 15 minutes at 160 degrees

Take out when golden brown and leave to cool

Assemble one on top of the other

3 Eggs

100g Caster Sugar

100g Honey

2 tsp Bitter Orange Peel

1 tbsp Finely Chopped Candied Peel

Pinch of Ground Cloves

190g flour

2 tsp Bicarbonate of Soda

Buttercream

125g Butter

125g Icing Sugar

2 Egg yolks

1/2 tsp Espresso or strong coffee

Chocolate Glaze

80g Icing sugar

60g Cocoa powder

50ml Water

A few drops of vanilla extract
