Lapskaus

Method

Soften the onion and celery in a large pan.

Add the sweet potato and swede.

Add in the lentils and stir.

Cover the mixture with the vegetable stock and leave to simmer for 30-40 minutes or until the vegetables are soft and the stock has been absorbed, ensuring that you stir occasionally.

Season to taste.

Serve with fresh bread.

Ingredients

1 onion, diced

1 stick of celery, chopped

1 sweet potato, chopped into cubes

1 swede, chopped into cubes

250g of green lentils

500ml of vegetable stock
