Norwegian Biscuits: Peppernøtter

Peppernøtter, translating directly to “pepper nuts,” are a seasonal treat of German origin, and are quite popular around Christmas in several Nordic countries. Recipes vary, but a healthy measure of cinnamon, ginger and cardamom are a safe bet when encapsulating that festive Scandinavian spirit.

Mix together the butter and sugar then add the eggs one at a time.

Add the cream then the other dry items.

Weigh the dough and seperate into equally sized balls, place on a lined baking tray and press down.

Baked until golden/light brown.

These biscuits have a soft ‘cakey’ texture.

250g Salted Butter (melted)

375g Caster Sugar

3 Eggs

25ml Double Cream

50g Chopped Almonds

25g Chopped Candied Peel

1 tsp Ground Black epper

1 tsp Ground Ginger,

1 tsp Ground Cinnamon

½ tsp Ground Cloves

600g Plain Flour
