Pyttipanne

Method

Heat the oil in a pan.

Sauté the garlic and onions.

Add the potatoes to heat through.

Add the smoked sausage and fry until the sausage is completely cooked.

Add the beetroot to the pan.

Meanwhile in a frying pan, fry the egg.

To serve place the potato mixture in a wide bowl and place the fried egg on top. (We serve it with ketchup too!)

Ingredients

(Serves 2)

2 tbsp oil

1 clove of garlic, finely chopped

1 white onion, finely chopped

500g boiled, new potatoes

1 cooked, diced beetroot

2 smoked sausages, sliced (alternatively use smoked halloumi)

1 egg
