Mutter B’s Coffee Biscuits
Mix together butter, sugar, flour, egg, ground cardamom and bicarbonate of soda. Dough should be firm enough to form to ‘sticks’ or ‘kringle’.
Add the raisins and candied peel and mix through.
Weigh the dough and seperate into equally sized balls, place on a lined baking tray and press down.
Mix the caster sugar and cinnamon together.
Separate the egg white and brush each biscuit, sprinkle flaked almonds and cinnamon sugar .
Baked until golden/light brown.
These biscuits are a ‘short’ crumbly biscuit.
